You Either Love it or You Hate it! It isn't often that you come across a new flavour combination that is both odd and pleasant in the same bite. Cooks striving for originality tend to let enthusiasm overtake good sense. So when offered a marmite truffle at the Brighton Chocolate Festival, my instinct was to avoid eye contact and move swiftly on. But my sense of adventure took over, and I reached for one of the samples. I'm very pleased I did. The marmite truffles were made by a charming lady called Sharon Clifford in her kitchen in Wales. They looked like conventional posh chocs, and their initial flavour was pleasantly chocolatey, not gimmicky at all. It took a few seconds before you felt the roundness and richness of the marmite. Being a diligent type I got in touch with Sharon after the show to find out what prompted this level of chocolatey eccentricity. Sharon is of Indian/Persian descent, which would suggest exotic flavours, but not necessarily marmite. It appears that Paul A Young was an influence, but she has very much made it her own.
